Fresh sauteed brain pieces, fresh cut myself, straight into the simmering frypan, Hannibal style..
A bit of steak seasoning, chives, salt & pepper tossed in.

Just trying to remember from my cook book about the best part of the cattle to eat, and isn't it where there's muscle but that it's not really used muscle? Wouldn't your calves be bad then since they're pretty well used? I'd take the meat from the middle of my back, right off my ribs Yum Yum...good and marbled
